Chicken
  1. Pull the meat from the Chicken. Shred the meat You'll use half of the meat for this recipe leaving you the other half to use for something else. Plus be sure to use the carcass to make a stock.
  2. Place about a TB fo Vegetable oil in a Skillet and turn the heat up to Medium-High. When the Oil is hot add the Chicken and give it a little seasoning with a sprinkle of Onion Powder, Garlic Powder and Chili Powder along with a pinch of Salt and Pepper.
  3. Once the Chicken begins to brown and start to "crisp" add the BBQ Sauce and the Greek Yogurt. Toss to combine
Corn Cakes
  1. Prepare the Corn Bread Mix according to the directions. Then whisk in the Greek Yogurt and the seasonings. Once Combined stir in the Corn Kernals
  2. Add about 4 Tb of Vegetable Oil to a large skillet. Heat on high. Then add a 1/2 C of the mix to form thin cakes. Cook for a few minutes per side until crispy and golden brown. Remove from the skillet and allow to drain on a paper towel
  3. Serve the cake with a portion of the BBQ Sauced Chicken garnished with Cole Slaw and a dollop of some more Greek Yogurt.
Recipe Notes

Use the rest of the Chicken Meat and the Stock made from the carcass to make some Bahn Mi Soup.
