Peel and cut the Carrots into 1" chunks. I used the vegetable chopper and gave each portion being chopped 40 whacks. Place the chopped Cabbage and Carrots in a large resealable bowl
In a separate bowl whisk together the Mayo, Sugar, Salt, Black Pepper, Milk, Buttermilk, Onion, Vinegar and Lemon Juice. Pour this over the Cabbage and Carrots. allow to marinate at least 4 hours before serving. Overnight is even better.
Instead of a Vegetable Chopper you could use a Food Processor. Just be careful to stop at a fine chop and not to turn it into a puree.
To amp up the color and the flavor add 1/4 head of Purple Cabbage and two Jalapeno peppers.
