Baked Parmesan Zucchini and Burgers

    Ingredients
    
                - 4 Zucchini quartered lengthwise
 - 1 c Parmesan Cheese grated
 - 1 tsp Dried Thyme
 - 1 tsp Dried Oregano
 - 1 tsp Dried Basil
 - 1/2 tsp Garlic Powder
 - 2 Lb Lean Ground Beef
 - 2 Tb Olive Oil
 - 2 Tb Parsley chopped
 - 2 C Marinara Sauce

    Instructions
    
                
        Zucchini    
                - Preheat oven to 350. Spray a cooling rack with cooking spray and set on a baking sheet Preheat a frying pan on med-high and drizzle with a little olive oil
 - Combine the Parmesan, thyme, oregano, basil, garlic powder along with salt and pepper to taste in a mixing bowl
 - Brush the cut side of the zucchini spears with olive oil then toss in the bowl to coat with the cheese and spice mixture. Place the spears on the prepared baking sheet and bake on the top rack of the oven until tender (about 15 minutes). Then broil for 2-3 minutes until the crisp and brown. Sprinkle with the chopped parsley
 
        Burgers    
                - While the zucchini is baking add the ground beef to the mixing bowl and combine with the balance of the cheese and spice mixture. Form into patties and pan fry
 
        
    Recipe Notes
    
                Serve the zucchini spears and burgers patties with a ramekin of marinara sauce for dipping
