Easy to prep ahead of time meal. Let the Chicken, Spices and Onion marinate overnight.
Oven Roasted Fajitas
Cut the chicken into thin strips and place into a bowl along with the Sliced Onions, Oil, Chili Powder, Cumin, Garlic Powder, Dried Oregano, and salt. Cover and place in the refrigerator overnight
In a large pan place the chicken mixture that has been marinating along with the bell pepper strips and the can of Rotel. Stir and toss to throughly mix together.
Bake uncovered for 20 minutes
Serve with corn tortillas, Mexican Creme, etc...
The dish shown also has a smear of the Avocado and Greek Yogurt dressing and a drizzle of fresh roasted Chili Verde
