  1. Heat the coconut oil in a large sauce pan over medium heat Add the Onions and cook until soft. about 3 min
  2. Add the ham, red pepper, celery and jalapeno. Cook until soft. About 2 minutes
  3. Add the Corn and thyme. Continue to cook, stirring occasionally for another 3 min.
  4. Stir in the tomatoes, half-and-half, vegetable stock and the hot sauce. Simmer for 15-20 minutes until the sauce has reduced and thickened

Serve with slices of nice crusty, toasted bread.
