If making the dish when prep is done preheat the oven to 350.
Place the Onion, Bell Pepper and Garlic in a Food Processor and blend until smooth.
Melt the butter in pan over medium-high heat and add the mixture from the Food Processor along with 1/2 tsp each of Salt and Black Pepper. Saute until the excess moisture has evaporated then remove from the heat to allow to cool
In a bowl mix together the Ground Beef, Egg, Worcestershire, Bread crumbs Cheese and the cooled vegetable saute. form into Baseball-sized meat balls (4 oz) and place in a foil cupcake cup placed in a muffin tin.
Mix the Ketchup, Chipotle peppers, Vinegar, Honey and Tabasco until well combined.
Top each meatball with the BBQ glaze and bake in 350 degree oven for 30-35 minutes (looking for an internal temp of 160)
Serve with additional sauce and topped with some mashed potatoes piped on top like frosting
Could also of course make this as a large meat loaf rather than the individual serving size but would need to bake it for 1.5 Hours
