Instructions
Fried Rice
  1. Place the Rice and Water in a pot. Bring the water to a boil then cover and reduce heat to a “3” on your stove. Cook for 18 minutes than remove from heat and leave covered. While the Rice is cooking start preparing the Pork
  2. When the Rice is cooled to a warm temperature heat the Oil in a large skillet or Wok. When the Oil is just starting to smoke add the Eggs and begin to scramble them.
  3. Add the Carrots, Onion and Green Chile. Continue to stir fry until the Onion is tender then add the warm Rice. Continue to stir fry making sure to break up any lumps in the Rice as it cooks
  4. Add the Salt, Black Pepper, Garlic, Cumin, Chicken Bouillon and Butter. Thoroughly stir to combine
  5. This stir in the Green Onions and again stir thoroughly to combine. Then add the Soy Sauce and Sesame Oil with a finally stir to combine. Serve immediately topping with pieces of the Pork and the Mango Sauce
Pork
  1. Place the Cut up Pork in a Mixing Bowl. Toss with the Egg White then add the Potato Starch to fully coat the Pork. Place in a Zip lock bag in the Fridge until to fry. Jump down to the making the Sauce
  2. Heat the Oil to 350 and add the Pork pieces to the hot oil to Fry. Allow each side to cook until golden brown and crispy. While the Pork is cooking start cooking the Fried Rice. When the Pork is done cooking move to a paper towel lined plate to drain
Mango Sauce
  1. Place the Mango, Lime Juice, Habanero Sauce, Tajin, Honey and Apple Cider Vinegar in a Food Processor. Blend until smooth. Either leave the sauce room temp or place in a small sauce pan to warm Now jump back up the instructions and start cooking the Pork
