For the Sweet Potatoes either make from Scratch or use some store bought Mashed Sweet Potatoes and cook them according to the directions
Cut the Chicken Breasts into strips and toss with the Montreal Seasoning
Heat a skillet over medium heat to melt 4 Tb of the butter (and preheat the oven to 195) then add the Chicken strips. Cook until no longer pink (about 3 minutes per side). Set aside on a foil lined sheet pan and place in the oven to keep them warm.
Add the remaining 2 Tb Butter to the Pan. Stir in the Maple Syrup and the Crushed Red Pepper. Cook for about 2 minutes then stir in the Green Onions.
Serve the Chicken strips over the mashed Sweet Potatoes and drizzle with the Maple Syrup sauce.
