Microwave the Potatoes per the package instructions
Cook the Ground Beef per the instructions on the Taco Seasoning packet
In a bowl combine the Mashed Potatoes, Ground Beef, Jalapeno, Cilantro, Green Onion and Salt. Allow to cool
Give a stack of the Corn Tortillas a quick 20 second heating in the microwave to make them pliable. Then place 2 Tb of the potato mixture just offset from center on a Tortilla and roll up. Secure with a toothpick. Repeat until the mixture has been used. About 12-15 rolled taquitos
Heat enough oil in a pan to allow the Taquitos to be shallow fried. Cook them in the hot oil about 3 minutes per side then move them to a paper towel lined plate to drain.
Green Chilie Sauce
Combine the Green Chilies, Mexican Creme, Cilantro, Salt and Pepper in a sauce pan. Stir and heat to a simmer.
Serve with a side of Refried Beans topped with shredded Cheese and Salsa
